Ingredients
  

For Chicken Marination

  • 800 grams Chicken (curry cut)
  • 2 tbsp Clarified Butter ghee
  • 1 tsp Degi Red Chilli Powder degi lal mirch
  • 1/2 tsp Turmeric Powder haldi
  • 1 tsp Coriander Powder dhania
  • 1 tsp Ginger-Garlic Paste adrakh lehsun ka paste
  • 1/2 tsp Lemon Juice nimboo ka ras
  • Salt to taste namak

For Masala

  • 2 tbsp Coriander Seeds dhaniya k daane
  • 1 tbsp Black Peppercorns kali mirch k daane
  • 3 pcs Cloves laung
  • 1 pc Black Cardamom badi elaichi
  • 3 pcs Green Cardamom elaichi
  • 1 tsp Sahi Jeera
  • Salt to taste

For Bhuna Chicken

  • 2 tbsp Oil tel
  • 1 tbsp Clarified Butter ghee
  • 1 pc Bay Leaf tej patta
  • 2 pcs Cloves laung
  • 3 pcs Onions (medium size, chopped) pyaj baarik kata hua
  • Water paani
  • Seared Chicken bhuna hua chicken
  • 1/2 cup Curd dahi
  • 2 tbsp Prepared Masala taiyar kiya hua masala
  • 2 tbsp Coriander Leaves dhaniya patta

Instructions
 

Process For Marinating Chicken

  • In a large bowl, add chicken, salt to taste, ghee, degi red chilli powder, turmeric powder, ginger-garlic paste, lemon juice and marinate it well. Keep aside for further use.

Process For Making Masala

  • In a non stick pan, add coriander seeds, black pepper corns, cloves, black cardamom, green cardamom and sahi jeera.
  • Dry roast all the whole spices till fragrant. Pour into a grinder jar and make a smooth powder. Keep aside for further use.

Process of Seared Chicken

  • Heat oil in a deep bottom pan, add clarified butter, once its hot, add marinated chicken and seared it from both the sides properly.

Process For Making Bhuna Chicken

  • Heat oil in a deep bottom pan, add ghee, once its hot, add bay leaf, black pepper corns, onions and saute on medium heat until its light brown in color.
  • Add little water, seared chicken and cook on medium flame for 4-5 minutes. Once the chicken is cooked, transfer into the serving dish and garnish it with coriander sprigs, tomato wedges and green chilli.
  • Serve hot.
