Kaju Katli Recipe
- 2 cups Cashew Nut Powder (put cashew in refrigerator for chilling and then make a powder)
For Sugar Syrup
- 1/2 cup Water 3/4 cup maximum
- 3/4 cup Sugar
- 2 cups Prepared Cashew Powder Kaju powder
- 1/2 tsp Cardamom Powder elaichi powder
- 1 tsp Clarified Butter Ghee
- 1/2 tsp Saffron Strands kesar
- Silver Vark Chandi ka warkh
- Fresh Rose Petals Gulab fool k patte
Process for Cashew Powder
- In a small mixer grinder jar , add cashews and grind till smooth powder.
- Then sieve (chaan na) the ground cashew powder. Keep aside for further use.
Process for making Sugar Syrup
- In a deep non stick pan add water, sugar and cardamom powder. Switch on the flame on low and keep stirring to form the syrup.
- Stir till it forms string consistency.
- While making sugar the ratio should be 3/4th cup water and 3/4th cup sugar. If you want you can add less water not too much less .Keep 2 tbsp Clarified butter or ghee on stand by.Do not overcook the sugar , just melt the sugar so that cashew powder absorbs the sugar syrup water .
Process for making Kaju Katli
- When you achieved string consistency sugar syrup , gradually or slowly add the 2 cups of cashew powder .
- Give it a proper mix till it starts releasing from the pan. Once your cashew paste turn into dough ,leave mixing and add clarified butter or ghee.
- Now after adding the clarified butter or ghee keep mixing till the clarified butter or ghee melts and cashew dough is formed leaving the pan. now switch off the flame.
- Now take a butter paper and grease it with clarified butter or ghee.Transfer the cashew dough on the grease paper.
- Now grease your hand with ghee and knead for about 30 seconds.
- Once the cashew dough get smooth , cover it with butter paper.
- Take a tray and press to a uniform layer and spread some saffron strands.Let it cool down to the room temperature before you roll the dough.
- Now roll the dough with a rolling pin , and adjust the thickness according to your wish.
- Then cut the dough into a traditional diamond shape or its up to your choice.Garnish it with silver Vark and fresh rose petals.
