Gajar Ka Halwa
Ingredients for Pressure Cook
- 1 tbsp Clarified Butter ghee
- 1 litre Milk doodh
- 2 kg Carrots ( peeled and grated) gajar ( chil k ghas lijiye)
- 1/4 tsp Saffron Strands kesar
- 1 cup Sugar chini
- Toasted Nuts
For Toasting Nuts
- 1/2 tbsp Clarified Butter ghee
- 10 pcs Almonds (chopped) baadam
- 10 pcs Cashew Nuts (chopped) kaju
- 7 pcs Pistachios pista
- silver vark chaandi ka warkh
Process For Toasting Nuts
- Finely chop almonds and cashew nuts. Keep aside for further use.
- In a pan, add ghee and heat it well. Once the ghee gets heated, add chopped almonds and cashew nuts into it.
- Saute the nuts and keep it aside for further use.
Process for Pressure Cook
- Peel and cut the carrot into halves and grate it.Keep aside.
- Grease the bottom of the pressure cooker with little ghee and pour milk into it.
- Heat the milk thoroughly. Once the milk is heated, add grated carrots into it and stir well.
- Close the lid and cook it till one cooker whistle.
- After that, transfer the mixture into a kadhai or pot or handi, and reduce the mixture cooking continuously for 15 minutes.
- Add saffron strands and sugar. Once the mixture is completely reduced after cooking it well.
- Then add toasted nuts into the mixture and mix it well. Garnish it with sliced pistachios and silver vark.
- Serve hot.
