Ingredients
  

For Instant Khaman Dhokla Batter

  • 2 cups Gram Flour besan
  • 1 tsp Sugar
  • Salt to taste
  • 1 tsp Lemon Juice nimboo ka ras
  • 1/3 cup Curd dahi
  • 2 tsp Ginger Paste adrakh ka paste
  • 1 tsp Turmeric Water haldi ka paani
  • 1/4 tsp Turmeric Powder haldi powder
  • 1 tbsp Oil
  • 2 tsp Fruit Salt Soda / Eno

For tempering

  • 2 tbsp Oil
  • 1 tsp Mustard Seeds sarso k daane
  • 1 Sprig Curry Leavea kari patta
  • 1 tsp Asafoetida hing
  • 3 pcs Green Chillies Hari Mirch
  • 1/2 cup Coconut Water
  • Salt to taste
  • 1 tsp Sugar
  • 1 tbsp Coriander leaves dhaniya k patte

Instructions
 

Process for making Dhokla Batter

  • In a bowl, add gram flour, lemon juice, salt to taste, sigar,curd, ginger paste, turmeric water, turmeric powder, water as required and whisk it nicely and mix it well into a smooth batter without any lumps.
  • In another mixing bowl, add oil and fruit salt (soda /eno) and mix well. Transfer this mixture into the batter and mix it very nicely. Keep it aside for further use.

Process for Steaming Dhokla

  • Add a glass of water into a 3 or 5 litre capacity pressure cooker and heat it over medium heat for 4-5 mintues.
  • Now place a small stand or a small bowl in the pressure cooker and place greased plates filled with batter over it.
  • Now close the lid of the pressure cooker and remove the whistle and cook it over medium heat for 15 minutes.
  • After 15 minutes of steaming open the lid and insert the toothpick or knife to check if dhokla is cooked or not, if not then cook it for 5 minutes.
  • Now your Dhokla is ready to get Tempering and to serve.

Process for tempering the dhokla

  • In a pan heat oil, curry leaves, mustard seeds, asafoetida, green chilli and let it splutter.
  • Now add coconut water, salt to taste, sugar and coriander leaves and mix well.
  • Pour the tempering on the prepared Dhokla and serve.
