For Marinating Mutton

  • 1 kg Mutton/lamb (curry cut)
  • 2 pcs Onions (medium size, sliced) pyaj
  • 1 tbsp Ginger-garlic-green chilli paste adrakh lehsun aur hari mirch ka paste
  • 1 pc Fresh Green Chilli hari mirch
  • 1 pc Bay Leaf tej patta
  • 8 pcs Black Peppercorns kaali mirch k daane
  • 2 pcs Cloves laung
  • 1 pc Black Cardamom badi elaichi
  • 1 1/2 cup Curd, beaten dahi
  • 2 tsp Coriander Powder dhaniya powder
  • 1/2 tsp Turmeric Powder haldi powder
  • 1 tsp Degi Red Chilli Powder degi lal mirch
  • Salt to taste namak

For Gravy

  • 2 tbsp Clarified Butter ghee
  • 1 tsp Cumin Seeds jeera
  • 1 inch Ginger adrakh
  • 1 pc Green Chilli Hari Mirch
  • 2 pcs Onion pyaj
  • Marinated Mutton
  • Salt to taste namak
  • 2 tbsp Coriander Seeds (crushed) dhaniya k daane
  • Water
  • 2 tbsp Coriander Leaves

For Garnish

  • Ginger Julienne adrakh lamba patla kata hua
  • Fresh Coriander leaves dhaniya patta


Process For Marinating Mutton

  • In a mixing bowl, add mutton, onion, ginger-garlic-green chilli paste, green chilli, bay leaf, cloves, black cardamom, curd, coriander powder, turmeric powder, degi red chilli powder, salt and mix everything well.
    Keep aside for atleast 1 hour or overnight in the freeze.

For Mutton Beliram Gravy

  • In a pot, heat clarified butter and cumin seeds, ginger, green chilli, onion and saute it properly until golden brown.
  • Now add the marinated mutton, saute it properly until the mixture starts to thickens and oil starts seperating.
  • Then add salt, crushed coriander seeds and saute for a minute.Now add water and cover it with a lid and cook untill the mutton is completely cooked (stir in between the cooking process).
  • Remove the lid and then add chopped fresh coriander leaves and stir it once.
  • Transfer it to the serving dish and garnish it with ginger julienne and coriander leaves.
  • Serve hot.
